The Margarita, a cocktail of legendary reputation, requires no grand introduction. It is said to have emerged from the family of old-school "daisies," a versatile and beloved line of libations in the 19th century. In its earliest incarnation, this drink employed brandy as its base, marrying it with the sweetness of syrup or liqueur, tempered by citrus juice and a splash of soda to achieve a harmonious balance.

From this foundation bloomed a myriad of concoctions, eventually giving rise to the Tequila Daisy. As time unfolded, the soda was left aside, and the drink assumed its Spanish moniker, the Margarita.

Adhering to the timeless 2:1:1 ratio allows the distinctive agave essence of tequila to take centre stage. With your first sip, a mischievous grin dances upon your lips, for the Margarita delivers a burst of unparalleled delight.

Preparation:

0.75oz / 22.5ml Fresh lime juice

0.75oz / 22.5ml Cointreau

1.5oz / 45ml 100% Blue agave tequila

Lime wheel

Prepare a lime wheel garnish. ½ rim a coupe with sea salt, fill it with cubed ice, and put it to one side. Add all the ingredients to a cocktail shaker. Shake for 10 seconds. Open and dip taste. Discard the cubed ice from the coupe. Fine strain. Garnish with a lime wheel.

NB: If you find this recipe a little tart then simply add a teaspoon of sugar syrup (2:1) at a time until you find the perfect balance.
